Rainbow Pizza

Quick & easy pizza that’s a delight for the taste-buds as well as your eyes!

Ingredients

  1. 1 large ready pizza-base (Recipe for making homemade pizza-base at the bottom of this recipe)
  2. 1 tablespoon garlic butter
  3. 1/4 cup grated mozzarella cheese
  4. 1/4 cup grated cheddar cheese
  5. 1/2 cup chopped onions
  6. 1/2 cup shredded spinach
  7. 1/2 cup boiled sweetcorn
  8. 2 tablespoons finely chopped red pepper
  9. 1 teaspoon chaat masala
  10. Salt to taste

Method

  1. Place the pizza base on a clean surface. Cut it from the middle into 2 semi-circles.
  2. Place each pizza-half with the arch side upwards and the horizontal side at the bottom.
  3. Use a cookie-cutter or lid of a jar to cut out a small semi-circle from the bottom (horizontal side) of each pizza half. This step is optional; it just helps in giving a perfect rainbow look!
  4. Apply garlic butter generously on both the pizza halves.
  5. Mix the mozzarella & cheddar cheese. Sprinkle the mixed cheese on the pizza halves saving a little for sprinkling at the end over the veggies.
  6. Arrange the chopped onions, spinach, sweet corn and red pepper one after the other (as shown in the picture)on each pizza half; trying to keep the thickness of each veggie layer as even as possible.
  7. Sprinkle some chaat masala & salt on the veggies.
  8. Sprinkle the remaining mixed cheese on the veggies. Please remember not to add too much cheese on the top as it will hide the veggies and you will not be able to achieve the desired rainbow look.
  9. Bake in a preheated oven at 160°C for 12-15 minutes or till the cheese gets melted. Alternatively, you can place it in a pre-heated non-stick pan, cover the pan with lid and cook on low heat till the cheese gets melted and the bottom of the pizza-base turns light brown and slightly crispy.
  10. Cut into wedges and serve with Virgin Pina Colada .
Recipe for Homemade Pizza-Base:

Ingredients: 1 cup plain flour, 11/2 teaspoon yeast, 2 teaspoons yogurt, 1 tablespoon oil, 1/2 teaspoon sugar, 1/4 teaspoon salt

Method: Combine all the ingredients for pizza in a large bowl. Add about 1/3 cup of luke warm water. Apply oil to your hands and knead a soft dough. Cover the bowl and keep it at a warm place for 2 hours. After letting the dough rest for 2 hours, it will rise and become almost double. Divide the dough in 2 equal parts. Roll each part of the dough into a ball. Place the dough ball on a dusted surface and roll it into a thick disc almost double the thickness of a roti. Prick holes in the rolled disc (pizza base) with the help of a fork. Heat a thick bottomed non-stick pan and grease it. Place the rolled disc/pizza base on the heated pan and reduce the heat to medium-low. Let the pizza base turn light brown from one side and flip it over using a spatula. Let it cook on the other side and the pizza-base is ready.
