Rainbow Fruit Tart (No-Bake)

Easy no-bake tarts with a creamy vanilla filling and topped with nutrients-packed colourful fruits. It makes a very unique party snack or a quick & vibrant dessert.

Ingredients

  1. 200g digestive biscuits or 1 cup biscuit crumbs of your choice
  2. 3 tablespoons unsalted melted butter
  3. 100g (1/2 cup) cream cheese
  4. 60 ml (1/4 cup) double cream or whipping cream
  5. 4 tablespoons powdered sugar
  6. 1 teaspoon vanilla essence
  7. 1 cup sliced mixed fruits of different colours (depending upon availability & choice)

Method

  1. To prepare the no-bake tarts, grind the biscuits into fine crumbs in a food processor. Melt the butter and combine it with the digestive biscuits crumbs in a large bowl. Mix well.
  2. Grease 2 tart tins (4 inch) with melted butter. Spoon the biscuits-butter mixture in each tin and press firmly on the sides as well as base. Keep it in the freezer 20 minutes to set firmly.
  3. While the tart rests in the freezer, prepare the cream cheese filling. Combine the cream cheese, sugar and vanilla essence in a mixing bowl. Mix well using a whisk till it becomes light and fluffy.
  4. Whip the cream to soft peaks using an electric or hand whisk. Add the whipped cream to the cream cheese mixture and fold it in the mixture till well combined.
  5. Remove the tarts from the freezer. Unmold them. Fill them with cream cheese mixture till they are about 3/4th full.
  6. Garnish with sliced fruit of your choice and refrigerate till ready to serve.

Recipe Tips:

  • You can sprinkle some powdered sugar on the fruits, it looks good and nicely complements the tartness of the fruits.
  • You can also prepare mini tarts using cupcake liners placed in a muffin tray. They are easier to unmold and look very cute.
  • You can also make it in a large tart tin and then cut the tart into wedges for serving.
